- 5 tablespoons of water to hydrate the gelatine
For the syrup:
- 1 cup sugar
- 1/2 cup water

How to make the pudding syrup
- Put the sugar and bring to the boil over medium heat, stirring constantly until it begins to melt.
- When it is well browned, carefullyadd the water little by little. Watch out for the steam!
- Stir until all the sugar is dissolved again and forms an glossy syrup.
- Pour this syrup into the bottom of a pudding dish (with a central hole) and turn to coat the sides well. Reserve.
How to make pudding without an oven and without eggs
- Get started hydrating the gelatineIn a bowl, mix the gelatine powder with the 5 tablespoons of water. Leave to stand for 5 minutes.
- Put the hydrated gelatine in the microwave for a minute. 15 seconds or melt in a bain-marie until liquid. Set aside.
- Put the condensed milk, cream and milk. Beat for 1 minute.
- With the blender running, add the melted gelatine in batches.
- Beat for more 2 minutesuntil the mixture is smooth and creamy.
- Pour the mixture over the cold syrup in the pan.
- Cover with plastic wrap or aluminum foil and refrigerate for at least 4 hours (ideally leave it overnight).
How to unmold your pudding
Once firm, remove from the fridge and dip the mold quickly in lukewarm water for a few minutes. a few seconds (this helps to loosen the syrup).
Carefully run a dull knife around the sides and center.
Place a plate on top and turn carefully. The syrup will run off beautifully and the pudding will be perfect!
